As a side note, I like to cook my chicken in the Instant Pot. It’s quick and easy and makes shredding the chicken a breeze. Simply add the chicken breasts to the pot with 1 cup of water. Cook on high pressure for 12 minutes. When the cook time is up, let the pressure release naturally for 5 minutes then do a quick release. Remove the chicken from the pot and shred with two forks. If you don’t have an instant pot, you can always just boil the chicken breast, or even better, a whole chicken (and make a great chicken stock in the process) If you don’t have time for this, simply boil the chicken breast. Chicken breast doesn’t doesnt have so much fat, so once it’s cooked, you can shred the meat apart very quickly.

Depending on how spicy you like things, you can adjust the amount of hot sauce you use. I usually start with 1 tsp. and add more if I think it needs it. Ingredients:

1 lb. boneless, skinless chicken breast, cooked and shredded*
1/4 cup diced grapes
1/2 cup mayonnaise**
1/4 cup diced celery
1/4 cup diced onion
1-2 tsp. Small Axe Peppers hot sauce
salt and pepper, to taste

To make the salad:

In a large bowl, combine cooked chicken, mayonnaise, celery, grapes, onion, hot sauce, salt and pepper. Mix evenely. Taste and adjust seasoning as necessary.

To assemble the Spicy Chicken Salad Sandwich:

Place 1/2 – 3/4 cup of the salad mixture on one slice of bread or 4 crackers. Next, top with another slice of bread or crackers. Repeat. Serve immediately or store in an airtight container in the fridge for up to 3 days. Enjoy!
