Everybody has a Mother and absolutely no one is more special than Mom. Sure, Dad is really important. And, grandparent’s and sibling’s too. But Moms, well nobody comes before Moms.

Often taken for granted, they are always our strongest supporter. You can’t do wrong in Mom’s eyes. When you are hurt, or not feeling well….there is no one else that can help you more than Mom. Think about the last time you were desperately need in emotional support. Sure, Dad was an important presence but it was Mommy’s love and care that really made you feel better. Am I right?

Instructions

Roast pine nuts in chopped garlic and olive oil until browned. Remove pine nuts from pan. Reduce heat and add vegetables and ; simmer until vegetables are tender, approximately 25-30 minutes. Increase heat to medium and add shrimp; cook until shrimp are heated through. Add pine nuts and rice. Remove from heat and add drained pineapple chunks and salt. Serves 6.
