
Glazed Mango Habanero Chicken
Its Valentine’s day which means its supposed to be red-hot, right? Well, if you’re looking to impress your date with some extra heat, then we have the recipe for you. This Mango Habanero Dish has a kick that’ll leave your date begging for more. After all, what’s sexier than a ‘lil spice!?
INGREDIENTS
- 8 chicken thighs, bone in (skin on or off is fine)
- salt and pepper to taste
- 2 large , ripe mangoes
- 1 habanero pepper de-stemmed , deseeded and deveined
- 1/4 cup honey
- 1/2 cup apple cider vinegar
- 1 cup water
- Perfect Brown Rice , Every Time
- Garlicky Ginger Carrots
- 2 teaspoons of Small Axe Habanero Mango Hot Sauce
INSTRUCTIONS
Note: click on times in the instructions to start a kitchen timer while cooking.

Roast at 400 degrees for 25 minutes or until golden brown and just cooked through.

To make the glaze add the rest of the ingredients ingredients (from the mangoes down) into the saucepan.

Cook on low for 15 minutes or until water has evaporated and the mangoes are soft. Remove the habanero and using a potato masher or whisk, mash the softened mixture.

Raise the oven temperature to 425 degrees.

Coat the chicken in the sauce and put back in the oven for 5-7 minutes.

Serve with Brown Rice and Garlicky Ginger Carrot
